The Vibrant Plate website offers a recipe for smoked ricotta ravioli, very similar to the dish served at The Dutch restaurant in NYC, while in San Francisco \u2013 where else? \u2013 you can find ice cream with the distinctive flavor of chocolate smoked sea salt at Humphry Slocombe.<\/p>\n<p><strong>The Meat of the Matter<\/strong><\/p>\n<p>Despite the current trend in smoking that includes everything from drinks to fish, many people like their smoke straight up \u2013 with their meat. A Digital Trends article entitled, \u201cLove Smoked Meat? Scientists Figured Out How to Make it Better,\u201d explains how the latest smoking methods and technology make smoked food safer <em>and<\/em> tastier \u2013 a win-win situation. The article maintains that although smoked food is delicious, the process that brings the smoked items to our plates can also cause carcinogens, i.e., substances that may cause cancer in our body. And, as they say, \u201cThat\u2019s something that no amount of tasty food is worth.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1889\" src=\"https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods3_resized.jpg\" alt=\"Coking up with new ideas for smoked foods\" width=\"819\" height=\"436\" srcset=\"https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods3_resized.jpg 819w, https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods3_resized-300x160.jpg 300w, https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods3_resized-768x409.jpg 768w\" sizes=\"auto, (max-width: 819px) 100vw, 819px\" \/><\/p>\n<p>However, borrowing from the automobile industry, researchers in Great Britain may have found a solution to this smoky dilemma. Their approach involves running smoke through a zeolite filter, a type of mineral that is also used to purify car exhaust gases. This filter can help extract more than 90% of benzo (a)pyrene, the main carcinogen in smoke.<\/p>\n<p>\u201cThe smoking process can cause carcinogens to form in foods,\u201d says Dr. Jane Parker, one of the researchers. \u201cNot all smoked foods are dangerous, but we do know most can contain low levels of these substances, so we should try to remove them. If we could produce a smoke with fewer carcinogens, but that still has the same great taste that would be ideal. Zeolite filters, which are put in a tailpipe, have been used in the car industry to reduce environmental pollutants, but they haven\u2019t been applied to food yet. We want to change that.\u201d<\/p>\n<p>Healthier smoked food is obviously a big draw but almost as important is the fact that the zeolite filter is said to actually improve the taste, giving the finished product a better, richer smoky flavor. In an article called, \u201cSmoked Foods are Tastier, Less Harmful with a Tip from the Auto Industry,\u201d the <a href=\"https:\/\/www.acs.org\/content\/acs\/en\/pressroom\/newsreleases\/2018\/march\/smoked-foods-are-tastier-less-harmful-with-a-tip-from-the-auto-industry.html\" target=\"_blank\" rel=\"noopener\">American Chemical Society<\/a> confirms that filtered smoke resulted in a more balanced taste, as opposed to a flavor that can be ashy and burnt. One theory for the taste difference is that the zeolite filter removes the smoke\u2019s larger molecules, which may be the ones that give some smoked foods their harsher flavors and smell.<\/p>\n<p><strong>Some Like It Hot<\/strong><\/p>\n<p>One of the most delicious smoked foods is cold smoked salmon, a.k.a. lox. Technically, lox refers to salmon that is cured in a salt-sugar rub or brine, and nova is cured and then cold-smoked (unlike lox or gravlax). However, if you\u2019re looking to make an impression on your guests, you should consider serving hot smoked salmon, using this delicious recipe from Steven Raichlen\u2019s Barbecue Bible website.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1886\" src=\"https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods_resized.jpg\" alt=\"Hot smoked salmon\" width=\"819\" height=\"436\" srcset=\"https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods_resized.jpg 819w, https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods_resized-300x160.jpg 300w, https:\/\/www.lionsdeal.com\/blog\/wp-content\/uploads\/2018\/09\/smoked-foods_resized-768x409.jpg 768w\" sizes=\"auto, (max-width: 819px) 100vw, 819px\" \/><\/p>\n<p><strong>Hot Smoked Salmon<\/strong><\/p>\n<p><u>Ingredients<\/u><\/p>\n<ul>\n<li>1-1\/2 pounds fresh skin-on salmon fillet<\/li>\n<li>1 cup Scotch whisky<\/li>\n<\/ul>\n<p><u>For the cure:<\/u><\/p>\n<ul>\n<li>1 cup dark brown sugar<\/li>\n<li>1\/2 cup coarse sea salt or kosher salt<\/li>\n<li>1 tablespoon freshly ground black pepper<\/li>\n<\/ul>\n<p><u>Directions<\/u><\/p>\n<ol>\n<li>Rinse off the salmon fillet and blot dry. Pull out any bones with kitchen tweezers.<\/li>\n<li>Place the fish in a nonreactive baking dish just large enough to hold it. Add the whisky and marinate in the refrigerator for 30 minutes, turning the fish twice.<\/li>\n<li>Drain the fish well in a colander and blot dry with paper towels, discarding the whisky. Wipe out the baking dish.<\/li>\n<li>Make the cure: Place the sugar, salt, and pepper in a large bowl and mix well, breaking up any lumps in the brown sugar with your fingers. Place one-third of this mixture in the bottom of the baking dish. Arrange the fish pieces on top, skin side down. Sprinkle the remaining cure over the fish, patting it into the salmon. Cover the fish with plastic wrap and cure in the refrigerator for 4 hours.<\/li>\n<li>Rinse the cure off the fish and blot dry. Arrange the fish pieces skin side down on a wire rack and dry in the refrigerator for 2 hours.<\/li>\n<li>Set up your grill for indirect grilling and preheat to low (250 degrees). (Alternatively, set up a smoker according to the manufacturer\u2019s instructions.)<\/li>\n<li>Oil the racks on the skin side of the fish first to prevent sticking and place the fish skin side down on the racks. If using a grill, add the smoking chips. Smoke the fish until golden brown, crisp at the edges, and just cooked through, about 1 hour. To test for doneness, press it with your finger\u2014the flesh will break into clean flakes. Alternatively, insert the probe of an instant-read thermometer through the thick end of the fish into the center. The internal temperature should be 140 degrees.<\/li>\n<li>Transfer the salmon to a wire rack over a rimmed baking sheet and let the fish cool to room temperature, then refrigerate until serving. It will keep in the refrigerator for at least 3 days or in the freezer, tightly wrapped in plastic wrap, for several months.<\/li>\n<\/ol>\n<p><strong>Smoking is Permitted<\/strong><\/p>\n<p>Regardless of how you do it and what you do it to, there\u2019s no denying that smoky food is trending. Smoky flavors are showing up everywhere \u2013 in restaurants and at catered events \u2013 and the trend is not just limited to meat. Vegetables, snacks and even dairy menu offerings have been adapting to the smoky trend and the reception has been enthusiastic. Smoke adds complexity to a food\u2019s regular flavor, which is particularly appealing to millennials who are forever looking for new and interesting flavors.
