so i guess polished steels are for knives with a toothier edge, as opposed to the more refined edges i put on my knives. doesn't really work for what i'm using it for. that said, its a quality steel and probably does what it's supposed to very well. i hear some butchers even sand them down with sandpaper to make them work better, perhaps ill try that. good for the price though.
